Fax or email - which is safer?

I always assumed email was better, but a colleague told me fax might be more secure in certain cases. Now I’m unsure which is actually safer for sending sensitive or legal information. Is there a detailed comparison somewhere that can help me decide based on real risks, not just opinions?
